Zen Muffins

Why are they so zen? I don’t know. All I do know, is that they make me so happy and they are an easy grab-n-go breakfast. Maybe that’s why they’re zen: they make my mornings a little easier. When Tori’s mornings are easier, everybody’s mornings are easier. Happy zen-ing everyone!

Ingredients:

Makes 1 dozen muffins

  • 2 cups almond flour
  • 1/2 tsp sea salt
  • 1 tsp baking soda
  • 1/2 tsp allspice
  • 1/2 tsp powdered ginger
  • 1/4 tsp clove
  • 1/2 cup shredded, unsweetened coconut
  • 3 eggs
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup or honey
  • 2 tbsp. grated fresh ginger
  • 1 cup grated carrot
  • 3/4 cup raisins or currants, soaked 15 minutes in warm water

-Preheat oven to 350 degrees.

-Mix flour, salt, baking soda, allspice, ginger, clove, and coconut in a large bowl.

-Whisk eggs until frothy. Add oil and syrup/honey. Mix.

-Add ginger, carrots, and drained raisins.

-Stir the wet ingredients into the dry ingredients.

-Spoon batter into lined muffin tins, bake 25 minutes.
