Teriyaki Glazed Burgers with Grilled Pineapple

It’s starting to look like summer! The birds are chirping, the skies are blue, the breeze is warm……makes me want to GRILL! I love burgers, I love teriyaki, I love pineapple. Put all three together and you’ve got a trifecta of deliciousness. In my humble, hungry opinion.



Serves 8

  • 2 lbs grass fed ground beef
  • 1/2 cup grated carrot
  • 1/2 cup chopped scallion
  • 1 jalapeno, finely diced
  • 1 tsp fresh grated ginger
  • 1 tbsp. coconut aminos
  • 1 tsp sriracha

-Mix all together in a large bowl, form into 8 quarter pound patties. Set aside

Teriyaki Sauce


  • 2 tsp arrowroot powder
  • 1/2 cup water
  • 1/2 cup coconut aminos
  • 1 cup pineapple juice
  • 1/4 cup raw honey
  • 1 tsp fresh grated ginger
  • 1 tsp minced garlic

-Combine water and arrowroot in a small bowl, set aside

-Mix the rest of the ingredients in a small pot. Heat to medium-high and bring to a boil. Simmer about 20 minutes until thickened. Pour in water/arrowroot mixture and simmer another couple minutes until even thicker. Take off the heat and set aside


  • 1 pineapple, cored and sliced into 8 rounds
  • 1 onion, sliced and grilled
  • 1 tomato, sliced
  • 1 avocado, sliced
  • extra sharp cheddar cheese (if not dairy free)
  • a dollop of homemade mayo
  • 1 head of iceberg lettuce for wrapping it all up

-Heat your grill or pan to med-high heat, cook burgers to preferred done-ness (top with cheese and melt, if using)

-Grill pineapple slices, basting with teriyaki as they cook

-Assemble the burgers:

Lay a patty down on one lettuce leaf, top with a piece of grilled pineapple, grilled onions, tomato, avocado, some mayo, and a drizzle of teriyaki. Fold it all up and eat your way to heaven.
